Our Chef

Vietnamese chef that cooked dishes for American Presidents. In November2000, the US president Bill Clinton and First Lady Hilary Clinton paid an official visit to VietNam. Six years later, also in November, George W. Bush, who was then in office, and his wife Laura Bush came to VietNam for a visit. Vietnamese chefs made considerable contributions to welcome the two former Presidents by serving special dishes. Chef Luke Ly felt honored to cook food for both of them when they visited Saigon, VietNam. He told the stories. First, it was Bill Clinton and more recently it was George W. Bush.
After the Presidents returned to the US, the White House's communications department sent Luke a letter in which the White House expressed their deep gratitude for the excellent assistance during their visit to Saigon, VietNam.

Fusion with flare. “It’s a real pho,” Luke said. And he should know. Luke’s been teaching people how to cook it for more than three decades. Chefs in Germany, Switzerland, France, and Texas all know how to make the real deal because of Luke, who cooked at five-star hotels for years, including Saigon’s New World Hotel. As part of his job, he taught his secrets to chefs at sister hotels all over the world, trading Vietnamese recipes for those from other nationalities. “We all worked together,” Luke said. They combined flavors and figured out what worked well together and what didn’t. Those trips helped build the menu of international cuisine that Luke and his fellow chefs in Saigon dished out to guests like American President Bill Clinton. Luke served beef brisket pho to Clinton, who also noshed on more international fare, such as fried food, burgers, and waffles

About Us

@Bites opened its door on the 10th of June 2020 in the beautiful, rich and historic landmarks of San Luis Obispo. We serve primarily Vietnamese cuisine with a Western fusion touch that proudly feature a combination of five fundamental tastes: Spicy, Sour, Bitter, Salty, and Sweet. Each of our dishes has a distinctive flavor that reflects one or more of these elements. Common ingredients include shrimp paste, fish sauce, bean sauce, rice, fresh herbs, fruit, and vegetables. Our traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of dairy and oil, complementary textures, and reliance on herbs and vegetables. It is also low in sugar and is almost always naturally gluten-free, as many of the dishes are made with rice noodles, rice papers, and rice flour instead of wheat. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, we strive every step of the way to offer you one of the healthiest cuisines.
